I can't stop you from buying your beans from the Billionaire with 2 shops on every corner, at least not with small batch coffee roasted to order. 

But small batch roasted to order with many sources of origin and roast levels ends up with lots of left overs. So we like any good bartender save the last little bit put them all in a barrel and sell that barrel cheap every month, but no older than 1 month we aren't monsters.
